I use a dual booting system of Ubuntu 8.04 LTS with Windows XP.For Linux novices like me its funny not finding the Refresh option like in Windows desktop.During first weeks of usage Whenever I log into Ubuntu I right clicks on desktop and tend to click Refresh which is not at all available and i find myself fooled by Tux ;-)!Windows users are too much habituated to clicking it!
Following is the method to refresh Ubuntu desktop.
Open Applications >> Accessories >> Terminal
and write down killall nautilus then press enter.Your desktop will be refreshed.
Similarly you can refresh GNOME panel by executing killall gnome-panel command.
If you find opening terminal and all annoying then you can make a launcher in desktop.
Right click on desktop click Create Launcher... select Application from Type, write some name for your launcher to identify and write 'killall nautilus' in the box 'Command:'.Press OK.The launcher will be created. You can drag this launcher to panel also.
This post is meant for enthusiasts because sincerely i don't find any particular effect of refreshing desktop in Ubuntu!!Low memory systems may benefit from that, don't know.
